Last year my entire family embarked on overhauling our diet in an effort to live healthier. We worked with a nutritionist for about 4 months making some serious changes to how we ate and what we ate. It was a really great experience and absolutely changed the way that I view the foods that I eat on a daily basis. One of the main points that our nutritionist made throughout the entire program was trying to get something green in every single meal. I have been a vegetarian for the past 10 years and so I love green veggies and fruits but sometimes it’s challenging to put something green on your plate that is versatile enough to eat with many different meals. That all changed when I found a recipe for Roasted Garlic Broccoli!
It is seriously so good that I could have this every single week, and I do usually have it at least every other week in some form. It has become my absolute favorite way to eat broccoli and leftovers store well in the refrigerator to mix in with other meals during the week. I usually get a big bag of fresh broccoli florets and cook the entire bag at once. I have cooked it as a side dish, used it in pasta dishes, and added it to my egg scrambles for breakfast. As an Italian food lover, my absolute favorite way to serve it is mixed in with edamame spaghetti and sun-dried tomatoes!
