We are a little over two weeks away from the first official day of fall but I have been slowly transitioning my meals and treats into more fall like foods. During this time of year, I tend to crave hearty soups, warm treats, and pumpkin spice everything! I admit I’ve already had a few pumpkin spice lattes even though the weather is still warm out. They are just so good. Last week I was walking through the kitchen and I spotted a few overripe bananas sitting on the counter. Suddenly the thought of warm banana nut bread seemed so good and so I whipped up a loaf. It turned out amazing and was so quick and easy to make that I had to share the recipe.

Gluten Free Banana Nut Bread
Ingredients
- 2 cups Gluten Free Baking Flour
- 1/2 cup Sugar
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 3-4 Ripe Bananas
- 2 Large Eggs
- 1 stick Butter softened (1/2 cup)
- 1/2 tsp Vanilla
- 1 tbsp Milk
- 1/2 cup Chopped Pecans
Instructions

Preheat oven to 350 degrees

Combine flour, baking powder, salt, & baking soda in a large mixing bowl

In a separate bowl combine butter, sugar, eggs, milk, vanilla, and mashed bananas. Mix well.

Stir banana mixture into flour mixture until you have a moist dough.

Stir in chopped pecans

Pour mixture into a lightly greased loaf pan and bake for approximately 50 minutes.
