I’m sure we have all been there. You return home from an amazing week long vacation and a after unpacking all day you go into the kitchen only to realize that there isn’t much food in the pantry. I found myself in this situation yesterday and after digging through the pantry, refrigerator, and freezer I settled on making pasta because it was the only dish that I had all of the ingredients for. I had a jar of store bought Bertolli Alfredo sauce and it turns out that after adding in a few extra ingredients I made a really delicious sauce. I thought I’d share it here in case you ever find yourself in a similar situation or if you just want to try something new.
First I chopped a few cloves of fresh garlic and sautéed it in a bit of olive oil.
Before the garlic was completely done I added in a sprinkle of red pepper flakes for a little extra spice! Next I added in sun-dried tomatoes and cooked the mixture until the tomatoes were warm.
Before I added in the Alfredo sauce I drained off most of the excess olive oil. The brand of sun-dried tomatoes that I use are preserved in olive oil and they tend to expel even more oil when they are cooked so you usually have to drain the excess oil before adding them to a dish. After the oil was drained I mixed in the store bought Alfredo sauce and heated it until the sauce was bubbling.
I served it over gluten free spaghetti with gluten free parmesan basil pita chips on the side! It really turned out to be delicious and was an easy way to jazz up a plain Alfredo sauce from a jar. Next time I’d love to add in some roasted garlic broccoli (recipe here).
