Happy Cinco de Mayo! I will use any excuse to indulge in some delicious Mexican cuisine and today I will be taking full advantage of the opportunity to make my favorite guacamole recipe. I LOVE me some guac! I will eat it for breakfast over toast, on a sandwich, nachos, burritos, tacos, and with chips. I may even eat it with a spoon if I didn’t have anything else to put it on. LOL That being said, a few years ago I visited a Mexican restaurant here in Nashville and had the best guacamole that I had ever had in my entire life. Once I got home I started researching recipes all over the internet trying to come up with something that tasted similar to what I had enjoyed at the restaurant and I came up with a recipe that I am extremely pleased with.
You will need:
- 4 Medium Avocados (halved, seeded, and peeled)
- 1 Lime (juiced)
- 1 tsp Cumin
- 1 tsp Salt
- 2 tbsp Cilantro (chopped) *I used Cilantro paste today
- 2 Garlic Cloves (minced)
- 1 Jalapeno (minced) *I use 2 because we like our guac SPICY!
- 2 Radish (minced)
- 2 Tomatoes (diced)
- 1/2 Yellow Onion (diced)
Once all of your ingredients are minced, diced, and measured out combine them all together. It’s really that easy! I like to combine all of my ingredients and add in the avocados last. I find that it helps me to get the texture that I prefer more easily doing it this way.
To keep left over guacamole from turning brown overnight, smooth it down as best as you can and then carefully pour water over the top until it is completely covered with a thin layer. Store it in an air tight container in the refrigerator and when you are ready to enjoy it again pour the water out, stir it up, and dig in!
